I will always miss you mom.

Well, today is the day I dread for an entire year. The day my mom passed away.

I can't believe it's been 4 years since I have seen her or talked to her. I relive that day quite a bit and I have the worlds most patient husband for putting up with my monthly breakdowns. Yes, it's been 4 years and I still have breakdowns. I miss her. It's not like it's an easy thing to overcome. I feel robbed of my time with her. A girl needs her mother, and my life has been so much harder since she has been gone. I feel so lonely without our daily talks, or lunches. I feel lost never knowing where to go for advice or help learning how to sew or cook something right. I feel that I am forgetting the sound of her voice, even though I try as hard as I can to remember it. I wish I could be one of those people who could move on and forget the pain, but that's just not me, and it's easier said than done.

4 years ago today, she spent the entire day watching my new 4 week old son so that my husband and I could enjoy our Anniversary ( which happened to fall the next day which was Sunday.) She had ironed all my husbands clothes, in an effort to help out with chores since our little one was consuming all our time. She gave me an anniversary present before we said goodbye, a crystal clock, which now sits in my keepsake cupboard. Every year gets better, but I still don't know how I am ever going to be the same without her. I feel numb and sad a lot. I miss her, and that will never change.

The 5th Wheel

Having children is a blessing. I love my 2 boys, and I am getting more and more excited for this little girl to arrive in a few months. I have heard that going from 2-3 kids is an easy transition, and that its 1-2 that kicks your butt. But did you know, that having 3 kids could be magical too? That's right.. Without this new little girl, THIS:

No, it's not quite the transition I would have hoped for, and we will miss our old car immensely. But there was really just no way 3 car seats, or 2 car seats and a booster would fit into our other car. So, I am entering a new phase of my life. Vanhood.

I'm just gonna tell people I drive a Mini :)

Yummy... bug juice?

I had read about this before, and had checked and checked my food for the ingredient Carmine. Most of my yogurt is flavored with beet juice. Then today, I sat here, 2 bites into my strawberry Yoplait, and there it was: COLORED WITH CARMINE. I stopped eating and immedietly went to the internet to make sure I was correct in my thinking.

Yes, there it was posted all over the internet. Carmine= Crushed up red beetles. YUMMY.

Ground up beetles found in yogurt -- carmine serves as insect-based food coloring ingredient

This is not a joke: there are ground up red beetles being used right now as a food coloring ingredient in yogurt, ice cream, juice drinks and many other grocery products. The ingredient is called "carmine."
Carmine is literally made from dried, ground-up red beetles, and its coloring (bright red) is used in yogurt, juice drinks, candies, and a long list of other products, including many "natural" products.
It's not that these red beetles are dangerous. Except for a few individuals who suffer severe allergic reactions to the beetles, most people do just fine eating carmine. Beetles are probably good for you, just like ants. High in protein, low in fat... you get the picture.
But there's a grossness factor that probably explains why products using this ingredient list "carmine" instead of "powdered red beetles" on the label. The Center for Science in the Public Interest (CSPI) has even petitioned the FDA to ban carmine(1), or, at the very least, require its clear labeling. The CSPI cites a study conducted by the doctors at the University of Michigan (headed by Dr. Baldwin, University of Michigan Medical Center) that demonstrated carmine can cause a severe allergic reaction known as anaphylaxis -- a condition that can put a person into shock and require hospitalization. But these reactions are extremely rare.

WHY DO MANUFACTURERS USE CARMINE?
People tend to buy foods that look good. The redder the juice drink, for example, the more "alive" it looks. That's why we pick bright-red apples and bright-orange oranges in the grocery store. The vibrant colors tell us, "This is ripe and healthy!"
It's no surprise, then, that consumers purchase food products with vibrant colors. Carmine adds this vibrancy and color to foods, making them more appealing to consumers. In other words, if it looks good, we are more apt to buy it.

HOW IS CARMINE MADE / WHERE DOES IT COME FROM?
Most carmine used in the United States is imported from Peru and the Canary Islands. They are harvested as follows"The insects are carefully brushed from the cacti... and placed into bags. The bags are taken to the production plant and there, the insects are then killed by immersion in hot water or by exposure to sunlight, steam or the heat of an oven. It is to be noted that the variance in appearance of commercial cochineal is caused by the different methods used during this process. It takes about 70,000 insects to make one pound (454 gm) of cochineal. The body of one coccineal is said to contain between 18-20% of carminic acid.
The part of the insect that contains the most carmine is the abdomen that houses the fertilized eggs of the coccineal. Once dried, a process begins whereby the abdomens and fertilized eggs are separated from the rest of the anatomical parts. These are then ground into a powder and cooked at temperatures in excess of 212? F (100? C) to extract the maximum amount of color. This cooked solution is filtered and through special processes that cause all carmine particles to precipitate to the bottom of the cooking container. The liquid is removed and the bottom of the container is left with pure carmine."

Yum. Not exactly what you had in mind when you were eating yogurt, was it? The most appetizing part of this description has to be, "...the abdomens and fertilized eggs are separated from the rest of the anatomical parts..."

First day of School 2009


I am so proud of my big boy. This is his 2nd year of Preschool, and he just loves it. He loves his teacher and even suggested we name our baby Miss Dawn. He is such a smart boy. I wish he wasn't born at the end of August so I could put him in Kindergarten next year ( technically he is supposed to go) but because of his late bday I am keeping him for another year so he won't be the youngest in his grade. So, sadly this won't be our last year of preschool. It's a good thing he loves it so much.

Landons 4th Bday

I can't believe my 1st born is 4 years old. There were times when he was a baby, that I thought I wouldn't survive him. His colic was so terrible, and I was struggling with the passing of my mother just weeks after his birth. Although I couldn't see it at the time, Landon ,I know was the way he was for a reason. He kept me moving, and got me out of bed every morning. Without him and his colic, I probably would have melted away into a black hole somewhere. He was my reason for living, and I love him more than he will ever know. He is the sweetest, most imaginative boy, and I thank Heavenly Father every day for sending him to us.



We decided to spend our family vacation this year as more of a staycation and go to St George and spend some time at Brett's parents condo for Landon's birthday. Money has been tight due to the economy, so it worked out rather well, and I have to say, we had a blast. We took Landon to do so many things, including going to Vegas to the Mandalay Bay Shark Reef Aquarium, The Fiesta family fun center for the arcade and bumper boats, and Pirate Island Pizza for his birthday dinner. Not to mention swimming and shopping every day.
(You will have to forgive my swollen face, it was WELL over 100 degrees, and that doesn't do a pregnant person justice)

The only way to eat a cupcake with 1 lb of frosting on it.

My dad gave Landon the best birthday present a 4 year old fish-lover could ask for: a fish tank, complete with rocks, tree, and treasure chest. All we needed to do was supply the fish.

We went to Petsmart and after seeing that half of their Beta's were either dead or lifeless, we opted for the cheap feeder-type goldfish at .27 cents a fish. It is our first family fish tank, so it's a good place to start I think. ( also, seeing as how 3 have already been flushed down the porcelain throne, it was probably a smarter investment.) Thank you Grandpa and Kelly, what a great gift. Even our trip to the Vegas Shark Reef aquarium doesn't compare.

Ever since we got it plugged in and going, this is what Landon has been doing.


And yes, he takes his toys up to play with them. I love my little 4 year old.

Turning Pink.


So, because I have been absent from the bloggity blog world for so long, I forgot to mention that I'm pregnant. I'm thinking everyone who reads my blog already knows this, so it shouldn't come as a surprise. Due Jan 10th, praying for Dec 30th ( gotta have that tax credit for next year right?) No..both my boys were born 10 days early, so I'm hoping this one will follow suit. It's also a girl. ( at least for now.) I say that because we found out that our first child was a girl, only to later find out that he was indeed NOT a girl. I think this one will actually stay a girl, seeing as how I was the one who saw it first, even before the ultrasound lady. It was plain as day... G.I.R.L.

So, here I sit in a little blue room with a sailboat border, with 10 tubs of blue and green and tan and brown things. No bows, no tights, no skirts, no pink, or purple of any kind in the vicinity. My ultimate plan is to pack it all up and sell it to kid to kid, or Ebay or something. Ebay seems like too much work right now, at least to get it all shipped out. If I take it to Kid to Kid, they will buy the good stuff and either give me money or a credit for the others. So basically I can turn my blue stuff into pink, and maybe throw some little bows into the mix somewhere.

To do list:

Sell boy things
get girl things
paint blue room girly
learn how to do a little girls hair
adjust whole attitude about raising children as I know it

There is a part of me that is sad that I won't have a little boy for Chayce to grow up with, seeing as how they will only be 19 months apart, but on the other hand, I would have been sad never getting that little girl too. Ultimately I think we are thrilled ( is that the right word?) with our outcome...

But ask me again in 5 months......

Beyond Glaze


My husband and I love to find little donut shops and try out there confections, so when we saw this place in Draper called " BEYOND GLAZE" that advertises "Gourmet Doughnuts" we decided we needed to go give it a try. We were a little leery at first because we saw that each donut was a pricey $1.50, meaning for the 6 doughnuts we bought, it cost us $9.00. They actually give you a price break if you buy a dozen and only charge you $16.00 for the 12. ( GULP!!) Most doughnut stores we go to cost around $6.00 a dozen. So, let me just say, we were hoping that for our $9 bucks, that we were going to enjoy something very special. The doughnuts themselves are less than amazing. Honestly they could be buying glazed doughnuts from Albertsons and you would never know the difference. It is the special glaze you are paying for. Toppings such as: Raspberry Mango, Key Lime Crumble, Pineapple Tart, Carmel Apple, Peanut Butter Raspberry, Pumpkin Cheesecake. Cookies and Cream, Chocolate Ganache, Etc. The glaze is awesome, it's fresh and made from real pure ingredients, but it can only take a sub-par doughnut so far, and it wasn't worth paying a fortune for 6 doughnuts, that I could buy anywhere else for only a few bucks. Sadly, we were disappointed. Glaze-Fabulous. Doughnuts-Grocery store quality. Put them together = Don't waste your $16 bucks on 12 doughnuts here. ( although the Raspberry Mango glaze was killer, I do have to say, and it would make any doughnut taste good)

Blog-worthy-ish

So, last Sunday my sister-in-law says to me " Your blog sucks." I laughed and replied "I don't care." Not that I didn't care about the comment, it was that I don't seem to care about my blog lately, so I totally know it sucks, but thanks Linds for the wake up call. Honestly I didn't have anything of interest to comment on. Uploading and resizing pictures too daunting of a task to master while you have a 1 year old climbing up your leg. ( he turned 1 and I can't even blog about that? I will when I can re size pics)

So, what you ask could wake me up from the blogging dead? A night out with friends at a yummy little restaurant with food I literally dreamt about all night long. Pizzeria 712 in Orem. My friend Arianne suggested we have a girls night and get some food that was actually worthy. I was a little sceptical because after previewing the menu online, I realized that I am the worlds pickiest eater and that I wouldn't enjoy most of it. After all, I didn't know what soppressetta or speck was. But, we went and ordered. Arianne, the veteran, told us we had to order the braised beef short ribs for an appetizer. My only regret that we shared it 4 ways. And let me just say, it had a horseradish cream sauce on it, which I was very scared about. You couldn't even tell it was horseradish. It was Divine. The grilled polenta was awesome too. For our dinners we ordered 2 pizzas to share. One, was Soppressetta and Speck, and the other had Artichokes, pine nuts, Gouda, lemon zest, caramelized onions ( yes, Robyn, I said onions, and honestly they were awesome) and some other herbs, but it was the most amazing pizza I have ever tasted. The other pizza was a combination of Italian meats like smoked prosciutto, had a more traditional feel, and while it was good, it paled in comparison to the artichoke pizza. I actually dreamed of the braised short ribs all night long, they were that good, so thank you Arianne for suggesting that place. I loved it. If you are wanting to go try this place now, I think you should, However, please note that because they buy from the local farmers market, their menu is ever-changing and they may not feature the same food every time you go. ( which is a good thing) Also, not a family joint. It's more of an adult place, I probably wouldn't take the babies. Enjoy!

Signs.

I will forever kick myself for not taking a picture of this.

On Valentines day 2009, we woke up to find a truly amazing thing. A heart made out of the sun shining in through my windows somewhere was clearly displayed on my ceiling. It wasn't a small heart either, I would say at least a foot or longer, and it was perfectly heart shaped. This is not something we had ever seen before, in fact, I haven't ever seen it happen again. Instantly images of my mother came to me. I felt like it was her way of saying that she loved us, and wanted to make sure we knew. At the time, my camera was on the outs, and taking a picture wasn't really an option, but I should have at least tried.

So I started to wonder if anyone would think I was nuts for thinking this. I mean, yes, I was just the sun shining in through my window. But, have you ever seen the sun make a perfect heart shape, and on the ceiling too? Has anyone ever felt like someone who has passed on found a way to connect with you?

Back in business

I can't believe it has been over 2 months since I posted something. Wow. I guess through all the sickness and winter blues a person can just get out of the habit and stop caring about it. ( that would be me)

I actually got to the point where I was just going to be done with Blogging altogether, but hey, how else is someone going to stay caught up in my oh-so-boring life?

Baby Feet

For those of you who know us, you will remember how tiny Landon was at birth, and how gigantic Chayce was. Chayce, was actually almost double Landon's weight. My tiny Landon weighed only 5.6 lbs, and chubby Chayce was 9.10 lbs.

I was going through one of my closets earlier tonight and found the following pictures. I found them so funny that I had to post. Proof of Chayce's enormity.


I am really hoping he sprouts upwards of 6'5 just like my tall, dark and handsome husband. Landon, poor kid, is probably going to be shorter like me. No one will ever know he is the oldest.

Tuna fish and pickles


I was sitting here eating my lunch today, which happens to be a big bowl of Tuna fish and pickles. I know, you think it's gross. I'm sure a lot of people do. But it's not. It brings back memories for me. My parents were pretty darn creative when it came to getting us to eat our meals, and I am so thankful for them. I have to give my parents an A + for creativity.


1: Duncan Eggs. I thank my dad for this one. Though technically called Dunk'in eggs, as kids we thought they were called Duncan. They are called Dunk'in eggs because they are fried and cooked over medium, giving you just enough yolk to dip your toast in. I mean, dunk your toast in.


2: Ooey Gooeys. I thank my mom for these. It was the breakfast of champions in our eyes. It wasn't just toast, it wasn't a sandwich. It was an open-face peanut butter and jam on hot toast.
which melts the peanut butter ever so nicely, creating that wonderful Ooey Gooey effect. And Ooey Gooey they were.


3: Special French Toast. Well, we didn't always have this because it was special. Ok, not really, but we thought so. Special French toast is made by taking your bread, and instead of coating it with an egg mixture, you dunk that bad boy in pancake batter instead. Trust me. It's good.
But yes, I know.. It sounds gross. Most of this stuff does. Moving on.

4: Tuna fish and pickles. I love fish. I get to eat it whenever I want. As long as my husband isn't around. He hates every part of it. Growing up, I never liked celery or onions ( still don't) so we went the pickle route instead. 1 can tuna, 2 tsp light mayo, and 3 baby dills... oh, and some fresh cracked pepper. No bread. Who needs the carbs. Just grab a bowl and go!

5. Toast N' Ketchup. My mothers favorite. Wheat toast, butter, and a whole bunch o' ketchup for dipping. Man, I love that stuff! Oh, and that reminds me..

6. Potato chips N' Ketchup. I know what you are thinking. Enough with the N's already. Fries are good in ketchup, so are chips.. don't knock it till you try it. I recommend the baked original flavor ruffles. Baked are better, and speaking of baked..

7. Baked Cheese sandwiches. My mom was a huge fan of the open-face sammies. 8 pieces of Wheat bread, 8 thick slices of real Cheddar. ( back in the day they didn't have pre-shredded options) Broil till brown and bubbly.

8. Peaches N' Cream. My mom was all about making fun and interesting breakfasts for us. We almost never ate cereal until we were older. We also had strawberries n' cream too. 1 bowl of fresh or canned peaches, milk, and a little sugar. Yummo!

9. Purple Cows. My mom used to do a lot of canning. She made tons and tons of red grape juice. So, we got grape juice, mixed with milk. Hence the purple cow. I am not sure if I would drink one now.. but maybe just for kicks. Bottoms up!

10. Spaghetti pancakes. Ya, we did eat this a couple times. Leftover spaghetti noodles, mixed with what I could only imagine to be pancake batter and then cooked like a pancake. Um... It wasn't bad, but I don't think I will be making this for my family any time soon. Not unless my husband grows a mullet and I start wearing sleeveless denim shirts and frayed shorts, while sporting a frizzy perm and mall bangs.

Thank you mom and dad for making my life so much fun. For always trying to be fun and creative with food. Maybe I should try that for my own kids. I don't think anyone would care to read my sons future blog post about Cheerios for breakfast....

I mean weeks? I have nothing to blog about.
So stay tuned for some awesome post in the next few... I dunno.. days, or weeks. As soon as something comes to mind. I'm just waiting for January to hit the road and Spring to peaks its head around the corner.

I eat losers for breakfast

Landon watches the movie Cars all the time. He loves it. Last night he told me he wanted to eat losers for breakfast. I thought it was the funniest thing, so I told him that if he kept his underwear clean and dry all night long, we could have them. Lightning McQueen says " I eat losers for breakfast." So, of course, Landon has to have them too. He obviously doesn't know what a loser is, and because I am doing my friend Tiburon's version of the biggest loser 6, we decided to have losers for breakfast. YUM.


Recipe for losers
3 oranges juiced ( approx 2 cups, if you don't own a juicer)
1 banana
1 Yoplait lite strawberry yogurt
1.5 cups of ice


stick it all in a blender and VOILA, you have your self a loser smoothie.
Move over Orange Julius.

Sparkle

I read somewhere, (and please forgive me if it was your blog, but I really can't remember where) that you should do something for your kids every day that makes their eyes sparkle. So I am vowing each day to do one thing for my kids that makes their eyes sparkle with happiness.
It doesn't take much to make a 3 year old shine.

Last night, we tried to make fun of making the bed. So, we played parachutes instead.

I think we have the Plague.

Well, it feels like it anyway. I have been sick since Dec 23rd when I thought I was coming down with strep and went to see the doc for meds so I could be non contagious before Christmas. I didn't have strep. Some nasty bug has infected our house from top to bottom and has not left. We have lysol'd the toys down every night, disinfected everything, hand sanitzed, etc. We are still sick.

Chayce is the happiest sick kid I have ever met. He has double ear infections and no one knew. He never had fevers and smiled his way through all of the snot we were trying to get out of him. The poor kid has a pretty nasty cough too.

Landon has Croup. Again. He always gets croup, and I'm sure that's what Chayce and I have, it's just not coming out as croup.

I have now have some chest cold/Bronchial cough that won't seem to let up. I feel so lucky that Brett was able to take Friday off to take care of us and help take boys to the doctor. Brett's parents came over today and brought dinner, which was a huge relief.

I can't seem to get this nasty bug out of my house. Does anyone have any ideas? PS, Lysol and disinfecting wipes aren't cutting it.
